Farmer’s Market Veggie Roast

It’s market day and time to grab, chop & roast all the fresh veggies I can get my hands on!!



Anything goes ~ really!!

Well, maybe not turnips.

And I’m learning about the greens too.  They can get a lil’ bitter if roasted too long, so next time any brussel sprouts, snap peas or bok choy come my way, I will add to the pot them half-way into the roasting time.

Good things to throw into the roasting pan:

Potatoes, carrots, parsnips, beets, tomatoes, mushrooms, GARLIC, asparagus, cauliflower, green beans, cabbage… you get the idea.
